The CAPITALIZED words in the primary pairing column denote an extremely COMPLIMENTARY pairing.

*Belgian Ales are not mentioned specifically in the book, but their flavors are pronounced with dried fruit, caramel, fig, raisins, toffee, and chocolate and so they pair well with Game, Pork, Lamb, and Flemish Stews cooked with beer the day before (which I'm certain people cook all the time).
